Color: It is a honey that crystallizes quickly thanks to the presence of honeydew which, as a rule, tends to remain liquid for a long time. The color changes decisively to dark brown, almost black, in liquid honey, up to medium brown in crystallized.
Flavor: velvety, dense and tenacious consistency, which is not found in any other honey since it has a slightly less sweet taste that leaves a less powerful aftertaste on the palate. 
Therapeutic action: Beneficial for the respiratory tract.
Pairings: It goes particularly well with sweet or not very tasty cheeses.
